When I baked pumpkin chocolate chip cookies last week I only needed 3/4 of my can of pumpkin. Not wanting to throw away said pumpkin, it took up residence in my refridgerator.
What does one do with a smidge of pumpkin? Eat it out of the can like cookie dough? Ew. It's a squash after all.
I put it in my yogurt.
It was the simplest thing I've made all season and probably my favorite.
Greek yogurt + pumpkin + honey + cinnamon + topped with pumpkin seeds.
I may or may not have bought a second can of pumpkin to keep in my refrigerator for this very purpose.
