Like I’ve said before, it’s not that I ruin things or am a terrible cook, I just don’t normally cook.
But I love that I’m 24.5 and thats finally changing.
Since moving to Austin a few weeks ago, I’ve been pretty intentional about cooking 90% of my meals at a 90% success rate.
AND HERE ARE THE FAVES:
Creamy Roasted Cauliflower Pasta - My kitchen is still in shambles from making this pasta last night. But guys, I made a sauce from scratch! AND that cauliflower. Can I just eat roasted cauliflower for like ever? Thanks.
Turkey Meatballs in Spicy Tomato Basil Sauce - Channeled my inner Giada DeLaurentes when I made these little guys using fresh tomatoes and real deal basil. I savored them over the course of a week, pairing them with toasted bread, fresh mozzarella, and straight out of the container. A definite staple.
Apple Banana Quinoa Breakfast Cups - These. If I could only have one thing for breakfast for the rest of my life, it’s these guys. Packed with flavor, protein, and warm deliciousness. My favorite way to enjoy is warmed through with butter, obviously. P.S. They work wonderfully as a mid-morning snack or even dessert!
Lentil Quesadillas - Okay, in full disclosure, I haven’t actually made these yet. Remember when I had no water? Yeah, this was supposed to be dinner. But just based on Lindsay's description, these are going to be killers.
Fried Chicken Biscuit with Goat Cheese & Baked Pickles (not pictured) - My Squawking Goat knock-off and the only thing that is getting me through waiting for my next visit to Jacksonville. Totally indulgent, completely delicious.
WHAT I LEARNED
- Planning 3-4 meals that I was excited about was just the fuel I needed to actually cook
- Having a list for the shopping trip made all the difference - on both time & money
- Cooking for 1-2 people = leftovers, which challenged me to creatively mix + match remaining dishes for breakfast, lunch & dinner
- I CAN COOK!
